The knife is a Kazan Aogami Super 150mm petty knife with stainless cladding over Aogami Blue core-steel, handle seems to be Pakkawood. Received as a free upgrade from Chubo Knives instead of the Sakai Takayuki 33 Layer Damascus Petty 150mm that was out of stock. Have yet to cut anything with it but the edge feels pretty good out of the box from.

Kazan HAP40 Hammered Two Piece Set

Kazan knives are well made and the steel is a Powdered Tool Steel with a rockwell 65-66 hardness, BUT it can be sharpened much like a softer steel. It also does not react to acids like Carbon Steel Knives. I like this steel MUCH more than ZDP 189 and in fact HAP40 is nick named "Voodo Steel." Kazan HAP40 knives rule in the kitchen.

Location. Pennsylvania. Jan 11, 2018. #3. I have only used the Takamura. It has great edge retention compared to most knives that I own. It is a very, very thin knife, probably the thinnest I have ever used. Comes with a very thin and fragile edge too. Sharpens fairly easy but not anywhere near as easy as carbon steel.

Kazan will be very easy to sharpen but won't hold and edge like the Black dragon, (might not be a huge difference in a home use setting) If you like the more rounded d-handle, a little less reactive blade with slightly improved edge retention, chose black dragon.. Appreciate the response, very excited about receiving my new knife - thank you.

kazan series from chubo. Thread starter panda; Start date Jun 8, 2017;. I've said this before a few times, but my Kohetsu Hap40 is by far the worst knife I've ever bought. Profile, geometry and F&F of the blade all suck BIG time. Though good edge retention and decent enough to sharpen. panda O.G. KKF Supporting Member.
